In 2013, Taylor Knapp worked as a chef on the North Fork of Long Island, striving to source the restaurant's ingredients seasonally and locally.

Once realizing that escargot is only available in cans in the United States, he decided to raise them himself. Peconic Escargot is proud to be able to offer you the absolute freshest escargot in the country... and maybe even the world.
